I made Doraemon Box Cakes! 💙🍰

These Korean-inspired box cakes have been on my bake list for quite a while. You don’t see a lot my own cakes on my page because I’m pretty intimidated by baking cakes. Baby steps with this easy recipe!

RECIPE 📝
Vanilla Cake (adapted from @introvertbaker)
* 1/2 cup unsalted butter
* 3/4 cup granulated sugar
* 2 eggs
* 1/2 tbsp vanilla extract
* 1.5 cups cake flour
* 1.5 tsp baking powder
* 1/2 cup whole milk
* Pinch of salt

Buttercream frosting
* 1/2 cup unsalted butter
* 1 .5 tsp vanilla extract
* 2 cups powdered sugar
* 2 tbsp milk
* Food coloring

DIRECTIONS 📝
1. Preheat oven to 350F
2. Beat butter and sugar in a bowl
3. Add eggs one at a time and continue mixing
4. Beat in vanilla extract
5. Combine the flour, baking powder, and pinch of salt in a bowl
6. Combine dry ingredients with butter mixture followed by milk
7. Beat on medium-low speed until combined
8. Add batter into greased cake pan
9. Bake for 20-25 minutes (use a toothpick to check it baked completely)
10. For the buttercream frosting, cream the butter with a hand mixer until smooth and fluffy. Gradually beat in powdered sugar until fully combined
11. Beat in vanilla extract
12. Add milk and beat until combined
13. Divide buttercream and add food coloring
14. Once cake is cooled, divide it into 8 squares
15. Combine box cake with buttercream and decorate as desired

This was one of my favorite dishes that I made last year during quarantine, and it’s been amazing to see people remake it. I used matcha and beet root powder to make the green and pink rice and his coat is made of inari.

I made Pooh and Piglet strawberry pop tarts! Trader Joe’s shortcut recipe hack below 👇

I made Kirby pop tarts from scratch before but I’m all about shortcuts when it comes to character bakes. Plus this hack is just as good and you can get all the ingredients from @TraderJoes 🛒

EASY SHORTCUT RECIPE 📝
All ingredients found at Trader Joe’s!

Pop tart:
- Organic strawberry fruit spread
- Frozen pie crusts (1 sheet)
- One egg (for optional egg wash)

Icing:
- Organic powdered sugar
- Low fat milk
- Red and yellow food coloring (optional)
- Candy melts (optional)

DIRECTIONS
1. Thaw the frozen pie crust and let the dough stand in room temperature
2. Roll out the dough into roughly a 12x8 inch rectangle
3. Preheat the oven to 375 F
4. Use a 2.9 inch cookie cutter to cut out 16 circles
5. Scoop half a tablespoon of strawberry fruit spread on 8 of the circles
6. Lay the other 8 circles on top of the dough with the fruit spread and gently press down to close the circle
7. Use a fork to press down around the sides
8. Optional: Beat one egg and use brush the pop tart for a nice golden brown crust
9. Bake it in the oven for about 15-20 minutes or until the crust is golden. Let it cool down on a baking rack

10. To make the icing for each color, mix 1/2 cup of powdered sugar with a few teaspoons of milk and 1-2 drops of food coloring until it becomes a thick but runny consistency.
11. Once the pop tart is cooled to room temperature, scoop the icing on top of the pop tart
12. Use black candy melts to draw on Pooh and Piglet’s faces

It was so hard to get a dark brown color on the meringue for Brown 🐻, but hopefully you can tell it’s him. Tips please! I also piped smol Cony and Sally Duck 🐰🐤 Which characters should I do next and why is it BT21? 😏

I made No-Face eclairs! 👻 Spirited Away is one of my favorite movies, and I’ve been wanting to do a No-Face bake for so long. He’s even holding gold pieces. 🥺⭐️

Baking has been therapeutic for me with the overwhelming emotions I’ve been feeling lately. It’s my first time making eclairs, and I’ve always wanted to try baking them since making choux pastries. I hope these bring some joy to your week!👨‍🍳🍫
